What's For Dinner? 3 Easy Weeknight Dinner Ideas and Recipes!

1. Buffalo Chicken Wraps

Ingredients:

  • 2 cups cooked chicken, shredded
  • 1/4 cup buffalo sauce
  • 4 large flour tortillas
  • 1 cup shredded lettuce
  • 1/2 cup diced tomatoes
  • 1/2 cup shredded cheese (cheddar or mozzarella)
  • Ranch or blue cheese dressing

Instructions:

  1. Toss the shredded chicken with buffalo sauce in a bowl until well coated.
  2. Warm the tortillas in a microwave or on a skillet for about 20 seconds to make them pliable.
  3. Place the shredded lettuce, diced tomatoes, and shredded cheese on each tortilla.
  4. Add the buffalo chicken on top of the veggies.
  5. Drizzle with ranch or blue cheese dressing.
  6. Wrap up the tortilla, tucking in the sides as you roll, and serve.

2. Philly Cheesesteak Sliders

Ingredients:

  • 1 lb thinly sliced steak (ribeye or sirloin)
  • 1 green bell pepper, sliced
  • 1 onion, sliced
  • 8 slices provolone cheese
  • 12 slider buns
  • 2 tbsp butter
  • Salt and pepper to taste

Instructions:

  1. Preheat your oven to 350°F (175°C).
  2. In a large skillet, melt butter over medium heat. Add sliced onions and bell peppers, and cook until softened, about 3-4 minutes.
  3. Add the thinly sliced steak to the skillet, season with salt and pepper, and cook until browned, about 2-3 minutes.
  4. Place the bottom halves of the slider buns in a baking dish. Layer the steak mixture evenly over the buns.
  5. Place the provolone slices over the steak, then cover with the top halves of the buns.
  6. Bake in the oven for 5 minutes or until the cheese is melted. Serve warm.

3. BBQ Pulled Pork Sandwiches

Ingredients:

  • 2 cups cooked pulled pork
  • 1/2 cup BBQ sauce
  • 4 hamburger buns
  • 1 cup coleslaw (optional)
  • Pickles (optional)

Instructions:

  1. Mix the pulled pork with BBQ sauce in a microwave-safe bowl.
  2. Heat the pork in the microwave for about 1-2 minutes or until warmed through.
  3. Toast the hamburger buns in a toaster or on a skillet for a minute or two.
  4. Pile the pulled pork onto the bottom halves of the buns.
  5. Top with coleslaw and pickles, if desired, and place the top halves of the buns on top.
  6. Serve with chips or a side salad.
